Hello everybody! So today I made these passion fruit yoyos. Credit to Donna Hay who I got the recipe from. I am going to give it to you but you can also find it here! If you are like me and you love passion fruit these yoyos are definitely for you.
Ingredients:
- 175g butter, softened
- ¾ cup icing sugar, sifted
- 2 teaspoons finely grated lemon rind
- 1 ¾ cup plain flour, sifted
- ¼ cup cornflour, sifted
- ⅓ cup passionfruit pulp
- 125g butter, softened
- 1 cup icing sugar, sifted
- ¼ cup passionfruit pulp
- Method:
- 1.Preheat the oven to 160ºC (320ºF).2. First make the passion fruit filling. To make the passionfruit filling, place the butter and icing sugar in the bowl of an electric mixer and beat for 6–8 minutes or until pale and creamy. Strain the passionfruit through a sieve to remove the seeds. Add to the butter mixture and beat for a further 3–4 minutes or until smooth. Set aside.3. Next make the biscuits. Place the butter, icing sugar and lemon rind in the bowl of an electric mixer and beat for 6–8 minutes or until pale and creamy. Add the flour, cornflour and passionfruit pulp and mix until combined.4. Line baking trays (I used 2) with non-stick baking paper.5. Roll heaped teaspoonfuls of the mixture into balls with damp hands and place on trays. Press each biscuit with a fork to flatten. Bake for 12–15 minutes or until light golden.6. Allow to cool on trays.7. with a spreading knife, spread the flat side of one biscuit with the passion fruit filling. like i have done.8. Place another biscuit on top and sandwich the biscuits together to serve.
I made these biscuits a bit bigger than I would have liked. They are delicious and so tasty.
